Preparation

    Chop Vegetables

    Peel and chop the carrots, celery, onion, and potatoes into bite-sized pieces. Mince the garlic.

    Prepare Broth

    In a large pot, combine the vegetable broth and water and bring to a simmer over medium heat.

Cooking

    Sauté Vegetables

    In a separate pan, add a splash of oil and sauté the chopped carrots, celery, onion, and minced garlic until they are softened, about 5-7 minutes.

    Combine Ingredients

    Add the sautéed vegetables to the pot with the broth. Then, add the chopped potatoes, salt, black pepper, thyme, and bay leaves.

    Simmer the Soup

    Bring the mixture to a boil, then reduce to low heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.

    Add Optional Ingredients

    If using, add the cooked chicken and/or pasta to the pot during the last 5 minutes of cooking.

Finishing Touches

    Taste and Adjust

    Taste the soup and adjust seasoning if necessary. Remove bay leaves before serving.

    Ladle the soup into bowls and serve hot.
