Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring water to a boil over high heat. Add a pinch of salt.

  2. 2

    Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain Pasta

Once the pasta is cooked, drain it in a colander and set aside.

Preparing Vegetables

  1. 4

    Chop Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces.

  2. 5

    Halve Tomatoes

Slice the cherry tomatoes in half.

Making the Sauce

  1. 6

    Heat Oil

In a large skillet, heat the olive oil over medium heat.

  2. 7

    Sauté Garlic

Add minced garlic to the skillet and sauté for about 1 minute, until fragrant.

  3. 8

    Add Vegetables

Add the chopped bell peppers, zucchini, carrots, broccoli, and halved cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

  4. 9

    Add Broth and Seasoning

Pour in the vegetable broth and add salt, black pepper, and red pepper flakes. Stir well and let simmer for 2-3 minutes.

Combining Everything

  1. 10

    Combine Pasta and Sauce

Add the drained pasta to the skillet with the vegetable mixture. Toss everything together to coat the pasta in the sauce.

  2. 11

    Serve

Serve hot, and sprinkle with grated Parmesan cheese if desired.
