Chips Preparation

Prepare the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tortilla Chips
Carefully add the tortilla chips in batches to the hot oil, frying them until they are golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while still hot.
Queso Preparation

Melt the Cheeses
In a medium saucepan over low heat, combine the Velveeta cheese and cream cheese. Stir occasionally until melted and smooth.

Add Other Ingredients
Once the cheeses are melted, add the sour cream, diced tomatoes with green chilies, jalapeño peppers, ground cumin, and chili powder. Stir well to combine.

Heat Through
Continue to cook on low heat, stirring frequently, until everything is heated through and well mixed, about 5 minutes.

Layer the Chips
On a large serving platter or plate, spread a generous layer of tortilla chips.

Pour the warm queso over the chips, ensuring they are evenly coated.

Sprinkle the chopped onions, diced tomatoes, sliced black olives, and shredded cheddar cheese evenly over the queso.

Serve the nachos immediately while they are hot and cheesy, with additional jalapeños or sour cream on the side if desired.
