Broth

Method

Prepare the Broth

  1. 1

    Combine Water and Dashi

In a medium pot, add 4 cups of water and 1 tablespoon of dashi. Bring to a gentle boil over medium heat.

  2. 2

    Add Miso

Once the water is boiling, reduce the heat to low. In a separate bowl, mix 3 tablespoons of miso paste with a small amount of hot broth until smooth. Then, stir this mixture back into the pot.

Prepare the Vegetables

  1. 3

    Soak Seaweed

In a small bowl, soak 2 tablespoons of dried wakame in warm water for about 10 minutes, or until rehydrated. Drain and set aside.

  2. 4

    Prepare Tofu

While the seaweed is soaking, cube 1 cup of firm tofu into bite-sized pieces.

  3. 5

    Chop Green Onions

Slice 2 stalks of green onions thinly, separating the white and green parts.

Combine and Serve

  1. 6

    Add Tofu and Seaweed

Once the miso has dissolved in the broth, add the cubed tofu and rehydrated seaweed to the pot. Allow to simmer for an additional 5 minutes.

  2. 7

    Finish with Green Onions

Just before serving, stir in the sliced green onions, reserving some of the green parts for garnish.

  3. 8

    Serve Hot

Ladle the miso soup into bowls, garnish with reserved green onion tops, and serve hot.
