    Prepare the Steak

    Take the filet mignon out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steak

    Rub both sides of the steak with olive oil, and season generously with salt and black pepper.

    Sear the Steak

    Heat a skillet over high heat. Once hot, add the seasoned filet mignon to the pan. Sear for about 4-5 minutes on one side until a brown crust forms.

    Flip and Add Butter

    Flip the steak using tongs, add the butter and rosemary to the skillet. Cook for an additional 4-5 minutes for medium-rare, basting the steak with the melted butter.

    Rest the Steak

    Once cooked to your desired doneness, remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Drain and Mash

    Once the potatoes are cooked, drain them and return them to the pot. Mash the potatoes using a potato masher until smooth.

    Add Butter and Milk

    Add the butter, milk, salt, and black pepper to the mashed potatoes. Stir until well combined and creamy. Adjust seasoning to taste.

    Serve

    Spoon the mashed potatoes onto a plate and serve alongside the rested filet mignon.
