Fried Chicken

Marinate the Chicken
In a large bowl, pour buttermilk over the chicken thighs. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Breading
In a large shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Chicken
Remove the chicken from the buttermilk and shake off excess. Dredge each piece thoroughly in the flour mixture, ensuring an even coating.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the chicken thighs and fry for about 7-8 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Cook the Macaroni
In a large pot of boiling salted water, add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and whisk for about 5 minutes, or until the sauce thickens.

Add Cheeses
Remove the pot from heat and stir in the shredded cheddar and mozzarella cheese until melted and creamy. Season with salt and black pepper.

Combine and Serve
Add the cooked macaroni to the cheese sauce, stirring well to combine. If desired, top with breadcrumbs for added texture. Serve warm alongside the fried chicken.
