Corn Fritters Preparation

Prepare the Batter
In a large mixing bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, baking powder, salt, and black pepper. Mix well.

Heat the Oil
In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fritters
Using a spoon or small ice cream scoop, drop batter into the hot oil, frying in batches. Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
Cheese Sauce Preparation

Make the Roux
In a saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour and cook for 1-2 minutes to form a roux.

Add Milk
Gradually whisk in the milk, stirring constantly to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

Add Cheeses
Remove from heat and stir in the chipotle gouda and white cheddar cheese until melted and smooth. Season with salt and black pepper to taste.
