Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the buttermilk with the cleaned and cut calamari. Allow it to marinate for at least 30 minutes in the refrigerator.

    Make the Coating

    In a separate bowl, mix the flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and let the excess drip off. Dredge the calamari rings in the flour mixture until fully coated.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

House-Made Marinara Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Spices

    Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the Marinara

    Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

    Garnish

    Before serving, sprinkle chopped fresh parsley on top of the marinara sauce.
