Preparation of Chicken

Prepare Chicken Breasts
Preheat your oven to 375°F (190°C). Take the chicken breasts and pat them dry with paper towels. Season both sides with salt and black pepper.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dredge each chicken breast in flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure it sticks.

Fry the Chicken
In a large skillet, heat about 1/4 inch of oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Assemble Chicken Parmesan
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon the remaining marinara sauce over each chicken breast, then sprinkle the shredded mozzarella cheese and chopped basil on top.

Bake
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly. If desired, broil for an additional 2-3 minutes to achieve a golden top.

Remove the Chicken Parmesan from the oven and let it rest for a few minutes before serving. Garnish with additional fresh basil if desired, and serve with pasta or a side salad.
