    Toast the Bread

    Begin by toasting the sourdough bread slices until they are golden brown and crispy. Set aside.

    Prepare the Cheese

    Shred the Gruyère and Cheddar cheese into a bowl and mix them together. Set aside.

    Caramelize the Onions

    In a pan over medium heat, add a small amount of oil and sauté the onions until they are soft and caramelized, about 20-25 minutes.

    Sauté the Spinach

    In the same pan, add fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste.

    Spread the Condiments

    Spread Dijon mustard on one slice of toasted sourdough and mayonnaise on the other slice.

    Layer the Ingredients

    On the slice with mustard, layer the caramelized onions, followed by the sautéed spinach, and finally top with the mixed cheeses.

Cooking

    Melt the Cheese

    Heat a skillet over medium heat and place the assembled sandwich on the skillet. Cook for about 3-4 minutes on each side, pressing gently with a spatula, until the cheese is melted and the bread is golden brown.

    Remove from the skillet, slice in half if desired, and serve immediately while hot and gooey.
