Preparation

  1. 1

    Prepare the Sourdough Bread

Take two slices of sourdough bread and set them aside for later use.

  2. 2

    Caramelize the Onions

In a skillet over medium heat, melt 1 tablespoon of butter. Add thinly sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove from heat and set aside.

  3. 3

    Prepare the Spinach

In the same skillet, add the fresh spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside.

Assembly

  1. 4

    Mix the Condiments

In a small bowl, combine the Dijon mustard and mayonnaise, mixing well until smooth.

  2. 5

    Layer the Ingredients

Spread the Dijon-mayo mixture on one side of each slice of sourdough bread. On one slice, layer half of the cheddar cheese, half of the Gruyere cheese, all of the caramelized onions, the sautéed spinach, and the remaining cheese. Top with the second slice of bread, condiment side down.

Cooking

  1. 6

    Cook the Sandwich

In the same skillet, melt the remaining tablespoon of butter over medium heat. Place the sandwich in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

  2. 7

    Serve

Once cooked, remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve hot.
