Preparation of Rice

Cook the Rice
In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and water is absorbed.

Mix the Sauce
In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Whisk until smooth and set aside.
Stir-Frying Vegetables

Stir-Fry the Vegetables
In a large skillet or wok, heat a little oil over medium-high heat. Add the bell peppers, broccoli, carrots, snow peas, and mushrooms. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.

Add the Sauce
Pour the prepared sauce over the stir-fried vegetables, stirring continuously for another 2-3 minutes until the sauce thickens and coats the vegetables.

Add Green Onions
Stir in the chopped green onions and remove from heat.
