Steak Preparation

    Season the Steak

    Take the ribeye steaks and rub them with olive oil, salt, and black pepper on both sides. Allow them to sit at room temperature for about 30 minutes.

    Cook the Steak

    Heat a skillet or grill pan over high heat until very hot. Place the steaks in the pan and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Add the sprig of rosemary to the pan during the last minute of cooking for added flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for about 5-10 minutes before slicing.

Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, and then dry them thoroughly using paper towels.

    Heat the Oil

    In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Fry them in batches for about 5-7 minutes or until they are golden brown and crispy. Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.
