    Wash and Cut the Potatoes

    Thoroughly wash the Russet potatoes under cold water to remove any dirt. Cut each potato into even strips, about 1/4 inch thick, to ensure uniform cooking.

    Soak the Potatoes

    Place the cut potato strips into a large bowl filled with cold water. Let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature for best results.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are as dry as possible to prevent oil splatter during frying.

    Fry the Potatoes

    Carefully add a portion of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and place them on paper towels to drain excess oil.

    Season the Fries

    While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika, tossing gently to evenly coat.

    Repeat

    Repeat the frying and seasoning process with the remaining potato strips until all fries are cooked and seasoned.

    Serve the crispy golden fries hot, either on their own or with your favorite dipping sauces.
