Calamari

Method

Calamari Preparation

  1. 1

    Clean the Calamari

Rinse the fresh calamari under cold water, and remove the head, tentacles, and innards. Cut the body into rings about 1/2 inch thick.

  2. 2

    Prepare the Breading

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create a dry breading mixture.

  3. 3

    Prepare the Egg Wash

In another bowl, whisk together the eggs and water until well combined.

  4. 4

    Coat the Calamari

Dip the calamari rings first into the egg wash, allowing excess to drip off, then dredge them in the dry breading mixture, ensuring they are well coated.

  5. 5

    Heat the Oil

In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Fry the breaded calamari in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

  1. 7

    Heat Olive Oil

In a saucepan, heat the olive oil over medium heat.

  2. 8

    Sauté Garlic

Add the minced garlic to the pan and sauté for about 1 minute, until fragrant, but not browned.

  3. 9

    Add Tomatoes and Seasonings

Stir in the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Mix well.

  4. 10

    Simmer the Sauce

Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened.
