Prepare the Onion Rings

    Slice the Onion

    Peel and slice the large onion into 1/2-inch thick rings.

    Prep the Breading Station

    Set up a breading station with one bowl of all-purpose flour seasoned with garlic powder, paprika, and salt, and another bowl of buttermilk.

    Bread the Onion Rings

    Dip each onion ring first into the flour mix, then into the buttermilk, and back into the flour mix for a crispy coating.

    Fry the Onion Rings

    Heat vegetable oil in a deep pot over medium-high heat. Fry the onion rings in batches until golden brown, about 2-3 minutes each. Drain on paper towels.

Cook the Bacon

    Cook the Bacon Strips

    In a skillet over medium heat, cook the bacon strips until crispy. Set aside on paper towels to drain excess fat.

Make the Burger Patties

    Form the Patties

    Divide the wagyu beef into 2 equal portions and form them into balls.

    Season the Patties

    Season each ball with salt and black pepper.

    Smash the Patties

    Heat a skillet or griddle over high heat. Place the beef balls on the skillet and use a spatula to smash them down into flat patties. Cook for about 3-4 minutes on one side until a crust forms.

    Flip and Cook

    Flip the patties and cook for an additional 2 minutes. If using, place a slice of cheddar cheese on top of each patty to melt.

Assemble the Burgers

    If desired, toast the burger buns on the griddle for a minute until golden.

    Add BBQ Sauce

    Spread BBQ sauce on the bottom half of each toasted burger bun.

    Layer the Ingredients

    Place the smashed wagyu patties on top of the BBQ sauce, followed by the crispy bacon strips and onion rings.

    Top with the other half of the bun and serve immediately.
