Tamal Preparation

    Prepare the Tamal Dough

    In a blender, combine sweet corn, masa harina, baking powder, salt, and vegetable broth. Blend until smooth. In a large bowl, mix the corn dough with melted butter until well combined.

    Prepare the Shrimp

    In a skillet, heat a little oil over medium heat. Add minced garlic and sauté for 1-2 minutes. Add tiger shrimp and cook until pink and opaque, about 3-4 minutes. Set aside.

    Assemble the Tamales

    Take a small amount of tamal dough and flatten it in your hand. Place a spoonful of shrimp in the center and fold the dough over to enclose the shrimp. Wrap in corn husks or parchment paper.

    Steam the Tamales

    Place the tamales upright in a steamer pot. Cover and steam for about 40-45 minutes, or until firm and cooked through.

    Make the Garlic Cream Sauce

    In a saucepan, simmer heavy cream and minced garlic on low heat for about 10 minutes, until slightly thickened. Season with salt to taste.

    Prepare the Avocado Lime Cilantro Puree

    In a food processor, blend avocado, lime juice, cilantro, and salt until smooth. Adjust seasoning as needed.

    Plate the tamales, drizzle with garlic cream sauce and chili oil, and serve with avocado lime cilantro puree on the side.
