Preparation Steps

  1. 1

    Marinate the Pork

In a bowl, combine the orange juice, chili powder, cumin, and minced garlic. Add the pork shoulder and coat evenly. Cover and refrigerate for at least 2 hours or overnight for best results.

  2. 2

    Cook the Pork

Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and grill for about 4-5 minutes per side until nicely charred and cooked through. Let it rest for a few minutes before slicing into thin strips.

  3. 3

    Caramelize the Onions

In a skillet, heat a tablespoon of oil over medium heat. Add the sliced onion and cook until softened and caramelized, about 10-15 minutes. Set aside.

  4. 4

    Char the Pineapple

On the same grill or skillet, add the pineapple slices and grill for about 2-3 minutes on each side until caramelized. Remove from heat and chop into small pieces.

  5. 5

    Warm the Tortillas

Warm the corn tortillas on the grill or in a dry skillet until soft and pliable.

  6. 6

    Assemble the Tacos

Place a few slices of the grilled pork on each tortilla, top with caramelized onions, charred pineapple, and your choice of salsa and pickled cabbage.
