Brown the Meat

In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

Sauté the Vegetables

Add the chopped onion, minced garlic, and bell pepper to the pot. Sauté for about 5 minutes until the vegetables are softened.

Combine Ingredients

Stir in the diced tomatoes, kidney beans, black beans, chili powder, ground cumin, salt, black pepper, and water or broth.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.

Serve

Taste and adjust seasoning if necessary. Serve hot in cups or bowls, optionally garnished with cheese or sour cream.
