Rice & liquids
Use 3 cups of cooked, fully cooled long-grain white rice (preferably leftover rice refrigerated overnight). Break up any clumps with your hands or a fork so the grains separate.
If rice is freshly cooked, spread on a baking sheet and chill for at least 30 minutes to dry slightly before frying.

Prep aromatics
Thinly slice scallions separating whites and greens. Mince garlic, grate ginger, and small-dice the onion. Crack two eggs into a small bowl and beat lightly with a fork.
Heat a large skillet or a wok over medium-high heat until hot. Add 1 tablespoon neutral oil and 1 tablespoon butter. Swirl to coat.
Vegetables & add-ins
Add the scallion whites, minced garlic, and grated ginger. Stir-fry 30–45 seconds until fragrant but not browned.
Add the thawed peas and any optional cooked protein (1 cup). Stir-fry 1–2 minutes to heat through and combine ingredients evenly.
Combine & season
Increase heat to high. Add the cooled rice to the wok in sections, using a spatula to press and spread the rice so it contacts the hot surface. Toss and stir continuously to prevent sticking and to heat through, about 3–4 minutes.
Drizzle 2 tablespoons light soy sauce and 1 teaspoon dark soy sauce evenly over the rice. Continue tossing so the soy distributes. Taste and add up to 1/2 teaspoon kosher salt and 1/4 teaspoon white or black pepper as needed.
Finish by adding 1 teaspoon sesame oil, tossing once more to combine. Remove from heat.
Serve
Transfer fried rice to a serving bowl or plates. Garnish with additional sliced scallion greens if desired and serve immediately while hot.
Adjust seasoning at the table with extra soy sauce or a small drizzle of toasted sesame oil if desired.
