Cooking the Rice
- 1
Rinse the Sushi Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
- 2
Cook the Sushi Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

Prepare the Fresh Tuna
Cut the fresh tuna into small cubes (about 1/2 inch). Place the cubed tuna in a bowl and drizzle with soy sauce and sesame oil. Mix gently to coat.
