Chia Pudding Preparation
Combine Ingredients
In a large mixing bowl, combine the chia seeds, coconut milk, maple syrup, vanilla extract, and a pinch of salt. Stir well until all the chia seeds are evenly distributed.
Refrigerate
Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency.

Prepare Mango
Peel and pit the ripe mango. Cut the flesh into chunks.
Blend
In a blender, add the mango chunks and lime juice. Blend until smooth and creamy. If the puree is too thick, add a splash of water to reach desired consistency.
Assembly
Layer the Pudding
Once the chia pudding has set, stir it gently to break up any clumps. Spoon the pudding into serving bowls.
Top with Mango Puree
Spoon the mango puree generously over the chia pudding in each bowl.
