Base

Method

Preparing the Base

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, beat the eggs, then add the vanilla extract, coconut milk, and pineapple juice. Whisk until smooth.

  3. 3

    Combine Wet and Dry Mixtures

Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined; do not overmix. The batter may be slightly lumpy.

  4. 4

    Prepare for Baking

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line with parchment paper.

  5. 5

    Bake

Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool

Once baked, remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Adding Toppings

  1. 7

    Prepare Toppings

Once the base has cooled, top it with a layer of diced fresh pineapple evenly spread across the surface.

  2. 8

    Add Coconut and Nuts

Sprinkle shredded coconut and chopped macadamia nuts generously over the pineapple layer.

  3. 9

    Finish with Whipped Cream

Dollop whipped cream over the top and garnish with maraschino cherries to taste.
