1. Prepare the Blue Cheese Sauce

Once hot, add the steaks and cook for 4-5 minutes per side for medium-rare, adjusting the time according to your desired doneness. Let the steaks rest for 5 minutes.

5. Assemble the Dish

Slice the heirloom tomatoes and arrange them on a plate. Add roasted fingerling potatoes, sautéed patty pan squash, and cipollini onions. Place the rested Wagyu NY Strip steak on top and drizzle with the blue cheese sauce.
