Cajun Spiced Redfish

    Prepare the Redfish

    Rub the redfish fillets with olive oil, lemon juice, and Cajun seasoning. Let marinate for 15 minutes.

    Cook the Redfish

    Heat a skillet over medium-high heat. Cook the redfish fillets for about 4-5 minutes on each side until cooked through and flaky.

Saltwater Prawn Etouffee

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add onion, green bell pepper, celery, and garlic. Sauté for about 5 minutes until softened.

    Add Prawns and Tomatoes

    Stir in the prawns and cook until they start to turn pink, about 2-3 minutes. Add the diced tomatoes, chicken broth, bay leaves, thyme, salt, and black pepper.

    Simmer the Etouffee

    Bring to a boil, then reduce the heat and let simmer for 15-20 minutes until the prawns are cooked through.

Dirty Rice

    Cook the Rice

    In a saucepan, bring chicken broth to a boil, add rice, cover, and reduce heat to low. Cook for about 20 minutes or until rice is tender.

    Sauté Meat and Vegetables

    In a skillet, brown the ground beef over medium heat. Add onion, green bell pepper, celery, and garlic. Sauté until vegetables are softened.

    Combine Ingredients

    Add cooked rice, Cajun seasoning, salt, and black pepper to the meat mixture. Stir well to combine and heat through.

Corn Chow-Chow

    Mix Ingredients

    In a bowl, combine corn, red bell pepper, onion, apple cider vinegar, sugar, salt, and black pepper. Mix well.

    Chill and Serve

    Let the chow-chow sit for at least 30 minutes before serving to allow flavors to meld.
