Method

For the Roasted Red Snapper

    Prepare the Fish

    Preheat the oven to 400°F (200°C). In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Rub this mixture all over the red snapper fillets. Place the fillets on a baking sheet lined with parchment paper.

    Roast the Fish

    Roast the snapper in the preheated oven for about 15-20 minutes or until the fish is cooked through and flakes easily with a fork.

For the Wild Mushroom Farro Risotto

    Cook the Farro

    In a pot, bring vegetable broth to a simmer. In a separate pan, melt butter and sauté shallots until translucent. Add chopped wild mushrooms and cook until softened.

    Combine Ingredients

    Add farro to the mushroom mixture, stir well, and then gradually add the simmering broth, one ladle at a time, stirring constantly until absorbed. Continue until the farro is tender and creamy.

    Finish the Risotto

    Stir in grated Parmesan cheese, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.

For the Whipped Mascarpone

    Whip the Mascarpone

    In a mixing bowl, combine mascarpone cheese, heavy cream, vanilla extract, and powdered sugar. Whip until soft peaks form.

For the Rainbow Swiss Chard

    Sauté the Chard

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add the chopped rainbow Swiss chard, salt, and black pepper. Cook until the chard is wilted.

For the Sauce Americaine

    Prepare the Sauce

    In a saucepan, melt butter and sauté minced shallots until translucent. Stir in tomato paste and cook for another minute. Add white wine and let it reduce by half.

    Finish the Sauce

    Add fish stock and heavy cream to the saucepan. Simmer until the sauce thickens, then season with salt and black pepper.
