    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced Vidalia onions and sauté until they are soft and caramelized, about 15-20 minutes.

    Add Garlic and Seasonings

    Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Then add the thyme, bay leaf, salt, and black pepper.

    Simmer the Soup

    Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 30 minutes, allowing the flavors to meld.

    Blend the Soup (Optional)

    For a smooth texture, use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.

    Serve the Soup

    Remove the bay leaf and ladle the soup into bowls. Top with asparagus flan, rock shrimp, crispy onions, and micro herbs for garnish.
