    Prepare the Steak

    Season the tomahawk steak with salt, black pepper, and olive oil on both sides. Let it sit at room temperature for 30 minutes.

    Cook the Sweet Potatoes

    Preheat the oven to 425°F (220°C). Cut fingerling sweet potatoes in half lengthwise, toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes, or until tender.

    Cook the Caulilini

    Steam or blanch the caulilini for about 3-4 minutes until tender but still bright green. Set aside.

    Cook the Steak

    Preheat a grill or skillet over high heat. Sear the steak for about 5-7 minutes on each side for medium-rare, depending on thickness. Use a meat thermometer to check for desired doneness.

    Make the Blue Cheese Sauce

    In a saucepan, combine heavy cream and blue cheese over medium heat. Stir until melted and smooth. Add garlic powder and adjust seasoning to taste.

    Slice the tomahawk steak and serve with roasted sweet potatoes and caulilini. Drizzle blue cheese sauce over the steak and garnish with fresh chives.
