Prepare the Ingredients
Clean the PEI mussels under cold running water, scrubbing the shells to remove any debris. Remove beards if necessary. Slice leeks into thin rounds and rinse thoroughly to remove any grit.

Cook the Bacon
In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, chop it into small pieces, and set aside, leaving the bacon fat in the pot.

Sauté the Leeks
In the same pot with the bacon fat, add the sliced leeks and sauté for about 5 minutes until they become soft.

Add Mussels
Add the cleaned mussels to the pot with the leeks. Pour in the heavy cream and sprinkle in the chopped bacon. Season with salt and black pepper.

Steam the Mussels
Cover the pot and steam the mussels over medium heat for about 5-7 minutes, or until all mussels have opened.

Serve
Once the mussels are cooked, serve them in bowls with the creamy leek and bacon sauce. Garnish with grated Parmesan cheese and serve alongside the marble potatoes.
