Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the Hatch chili grits. Reduce the heat and simmer, stirring frequently until thickened (about 20-25 minutes). Stir in the heavy cream, salt, pepper, and set aside.

Cook the Bacon
In a large skillet, cook the bacon lardons over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

Sauté the Shrimp
In the same skillet with the bacon fat, add olive oil and garlic. Sauté for about 1 minute until fragrant. Add the shrimp and Creole seasoning. Cook until the shrimp turn pink and are cooked through (about 3-5 minutes).

Assemble the Dish
To serve, spoon a generous portion of the Hatch chili grits onto a plate. Top with sautéed shrimp, crispy bacon lardons, and charred ramps. Drizzle with Romesco sauce.
