Method
Preparing the Lamb

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Lamb
In a small bowl, mix olive oil, minced garlic, rosemary, salt, and pepper. Rub this mixture all over the rack of lamb.

Roast the Lamb
Place the lamb on a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare or until desired doneness.
Cooking the Orzo

Cook the Orzo
In a pot, bring water and salt to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Combining and Serving

Prepare the Sauce
In a saucepan, heat the San Marzano tomatoes over medium heat. Stir in the kalamata olives and heat through.

Plate the Dish
On a plate, place a serving of orzo pasta, top with the tomato and olive mixture, and slice the roasted lamb. Garnish with crumbled feta cheese and a dollop of tzatziki sauce.
