Preparation and Cooking

    Prepare the Pheasant

    Preheat the oven to 375°F (190°C). Rub the wild pheasant with olive oil, then season it with porcini mushroom powder, salt, and black pepper. Place it in a roasting pan.

    Roast the Pheasant

    Roast the pheasant in the preheated oven for approximately 1 hour, or until the internal temperature reaches 165°F (74°C). Baste occasionally with its own juices.

    Make the Morel Mushroom Coulis

    In a saucepan, melt butter over medium heat. Add chopped shallots and sauté until translucent. Add morel mushrooms and vegetable stock. Simmer for 15 minutes, then blend until smooth. Stir in heavy cream and season with salt to taste.

    Prepare the Roasted Spring Vegetables

    Toss asparagus, carrots, and radishes with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast in the oven alongside the pheasant for the last 20-25 minutes of cooking.

    Make Crispy Onions

    Thinly slice the onion and soak in cold water for 30 minutes. Drain and pat dry. Dredge the onion slices in flour, shaking off excess. Heat oil in a frying pan and fry the onions until golden brown and crispy. Drain on paper towels.

    Plate the Dish

    Once the pheasant is done, let it rest for 10 minutes before carving. Serve on a plate with roasted vegetables, drizzle with morel mushroom coulis, and top with crispy onions and pomegranate pearls.
