Prepare the Peaches
In a bowl, combine sliced peaches with bourbon and vanilla extract. Allow to soak for at least 30 minutes.

Toast the Brioche
Preheat the oven to 350°F (175°C). Spread brioche cubes on a baking sheet and toast in the oven for about 10-15 minutes until golden brown.

Prepare the Vegetables
Thinly slice the red onion and cucumber. Halve the cherry tomatoes.

Combine Ingredients
In a large bowl, combine soaked peaches, toasted brioche, red onion, cherry tomatoes, cucumber, arugula, and spiced pecans.

Dress the Salad
Drizzle the basil vinaigrette over the salad mixture and toss gently to combine. Season with salt and black pepper to taste.

Serve
Plate the salad and top with torn pieces of burrata cheese. Drizzle with extra vinaigrette if desired.
