    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and sauté until caramelized, about 10-15 minutes. Remove and set aside.

    In the same skillet, add the remaining olive oil and sauté the wild mushrooms until golden brown, about 5-7 minutes. Season with salt and pepper.

    Char the corn on a grill or in a grill pan until lightly browned. Cut the kernels off the cob and set aside.

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add heavy cream and Cajun seasoning. Simmer for 5 minutes until thickened. Adjust seasoning with salt and pepper.

    Season the NY Strip steaks with salt and pepper. Heat a grill or skillet over high heat with a drizzle of olive oil. Cook the steaks for about 4-5 minutes per side for medium-rare, or to your desired doneness.
