Braise the Lamb
Return the lamb belly to the pot, and pour in the lamb or beef stock. Bring to a simmer, cover, and transfer to the oven. Braise for about 3 hours, or until the lamb is tender.
- 4
Prepare Mint Labneh
While the lamb is braising, mix the plain yogurt with finely chopped mint leaves and lemon juice. Season with salt to taste. Refrigerate until serving.
- 5
Cook Fava Beans
If using fresh fava beans, blanch them in boiling water for 2-3 minutes, then cool in ice water and peel. If using frozen, simply heat them in a saucepan until warmed through. Season with salt and black pepper.

Serve
Once the lamb belly is tender, remove it from the oven and let it rest for 10 minutes. Slice the lamb belly and serve with fava beans, mint labneh, and drizzle with lamb jus from the pot.
