Preparation and Cooking

    Prepare the Pork Tomahawk

    Preheat your smoker to 225°F (107°C). Rub the pork tomahawk chop with olive oil, then season generously with salt, black pepper, garlic powder, and fresh rosemary.

    Smoke the Pork

    Place the seasoned pork tomahawk in the smoker and smoke for approximately 2 to 3 hours, or until the internal temperature reaches 145°F (63°C).

    Rest the Meat

    Once cooked, remove the pork tomahawk from the smoker and let it rest for at least 10 minutes before slicing.

    Prepare the Smoked Ham Hock Jus

    In a saucepan, combine smoked ham hocks with water and simmer for about 1 hour. Strain the liquid, discarding the solids. Season the jus with salt and pepper to taste.

    Serve

    Slice the pork tomahawk and serve with the smoked ham hock jus drizzled over the top.
