Prepare Chicken

Marinate and Grill Chicken
In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add chicken breasts and coat them well. Let marinate for at least 15 minutes. Preheat the grill to medium-high heat. Grill chicken for about 6-7 minutes on each side or until cooked through and juices run clear. Remove from heat and let rest.

Slice the Tomato
Wash and slice the tomato into thin rounds.
Prepare Herb Mayo

Make the Herb Mayo
In a small bowl, mix mayonnaise with fresh herbs of your choice. Stir until well combined.
Assemble Sandwich

Toast the Brioche
Toast brioche slices on a skillet or toaster until golden brown.

Layer the Sandwich
Spread herb mayo on one side of each toasted brioche slice. Layer grilled chicken, smoked Gouda cheese, tomato slices, mixed greens, bacon, and top with the fried egg. Place another slice of brioche on top to complete the sandwich.
