Sushi Rice

Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed rice and 1.25 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix together 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 0.5 teaspoon of salt. Stir until dissolved. Transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow to cool.

Cook the Mushroom Filling

    Sauté the Mushrooms

    In a skillet over medium heat, add 1 cup of sliced shiitake mushrooms and 1 cup of sliced cremini mushrooms. Cook for about 5-7 minutes until soft.

    Add Flavorings

    Add 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 2 tablespoons of chopped green onions, and 1 minced garlic clove to the mushrooms. Stir and cook for an additional 2 minutes. Remove from heat and let cool.

Assemble the Rolls

    Prepare Nori

    Lay a bamboo sushi mat on a flat surface and place a sheet of nori on the mat, shiny side down.

    Add Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Layer the Fillings

    Place a line of the mushroom mixture, a few slices of avocado, and some julienned cucumber across the rice.

    Roll the Sushi

    Using the mat, gently roll the sushi away from you, applying light pressure to keep the roll tight. Seal the edge with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Sprinkle with sesame seeds for garnish. Serve with soy sauce.
