Ribs Preparation

Prepare the Ribs
Preheat your oven to 300°F (150°C). In a large baking dish, place the half rack of pork ribs.

Braise the Ribs
Cover the baking dish with aluminum foil and place it in the preheated oven. Braise the ribs for about 2.5 to 3 hours, until tender.

Make the BBQ Sauce
While the ribs are braising, in a saucepan, combine gochujang, honey, rice vinegar, and sesame oil. Heat over medium-low heat until the sauce is warm and well mixed. Set aside.
Pickled Onions Preparation

Pickle the Onions
In a medium bowl, combine the water, white vinegar, sugar, and salt. Stir until the sugar and salt dissolve. Add the thinly sliced red onions to the mixture and let them sit for at least 30 minutes, or refrigerate overnight for deeper flavor.

Broil for Finish
Turn on the broiler in your oven and place the ribs back inside for about 5-7 minutes, until the sauce is caramelized and bubbly.

Remove the ribs from the oven, garnish with chopped scallions, and serve with pickled onions on the side.
