Method

Preparation

  1. 1

    Prepare the Chickpeas

Drain and rinse the canned chickpeas under cold water. Set aside.

  2. 2

    Roast the Corn

If using fresh corn, grill or roast the corn until slightly charred. Allow to cool, and then cut the kernels off the cob. If using frozen corn, roast it in a skillet until golden brown.

  3. 3

    Mince the Garlic

Peel and mince the garlic cloves finely.

  4. 4

    Chop the Cilantro

Rinse the cilantro under cold water, then chop it finely.

Blending

  1. 5

    Combine Ingredients

In a food processor, add the drained chickpeas, tahini, lemon juice, minced garlic, roasted corn, chopped cilantro, chili powder, cumin, salt, and black pepper.

  2. 6

    Blend the Mixture

Pulse the food processor until the ingredients are well combined and smooth. You may need to scrape down the sides of the bowl occasionally.

  3. 7

    Adjust Consistency

If the hummus is too thick, add a tablespoon of water at a time until you reach your desired consistency.

Serving

  1. 8

    Transfer to Serving Bowl

Scoop the hummus into a serving bowl.

  2. 9

    Add Optional Toppings

Top with extra roasted corn, a sprinkle of chili powder, chopped cilantro, and crumbled Cotija cheese if desired.

  3. 10

    Serve

Serve with tortilla chips, fresh vegetables, or pita bread for dipping.
