Main Ingredients

Honey Mustard Dressing

Method

Main Ingredients Preparation

  1. 1

    Grill the Chicken

Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest before slicing.

  2. 2

    Prepare Hard-Boiled Eggs

Place eggs in a saucepan and cover them with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Transfer the eggs to a bowl of ice water to cool, then peel and slice.

  3. 3

    Cook the Bacon

In a skillet over medium heat, cook the maple-pepper bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into pieces.

  4. 4

    Prepare Vegetables

Slice the cucumber and tomato into bite-sized pieces. If using frozen edamame, cook according to package instructions and drain.

  5. 5

    Combine Ingredients

In a large bowl, combine sliced grilled chicken, sliced hard-boiled eggs, chopped bacon, cucumbers, tomatoes, roasted corn, and edamame.

Honey Mustard Dressing Preparation

  1. 6

    Make the Dressing

In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper until smooth and well combined.

Final Assembly

  1. 7

    Assemble the Salad

On a large platter or individual plates, layer the mixed greens. Top with the chicken mixture and drizzle with the honey mustard dressing. Optionally, sprinkle with additional gouda cheese.
