Prepare the Base

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside to cool.

    Chop Vegetables

    While quinoa is cooking, wash and chop the cherry tomatoes, cucumber, and red bell pepper into bite-sized pieces. Place them in a large mixing bowl with 2 cups of fresh spinach. Slice the avocado and set aside.

Cook Protein

    Grill Chicken

    Season the large chicken breast with salt and pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F). Remove from grill and let it rest for 5 minutes before slicing.

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of honey, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

Assemble Salad

    In the bowl with chopped vegetables, add the cooled quinoa and sliced grilled chicken. Drizzle the dressing over the salad and toss gently to combine.
