Method
Prepare the Burger Patty

Season the Beef
In a bowl, combine the Angus beef with salt and black pepper. Mix gently to combine, being careful not to overwork the meat.

Form the Patty
Divide the seasoned beef into two equal portions and shape them into burger patties, about 1 inch thick.
Cook the Burger and Bacon

Cook the Burger Patty
In the same skillet, increase heat to medium-high. Cook the burger patties for about 4-5 minutes on each side for medium doneness. Add the Pepper Jack cheese on top during the last minute of cooking to melt.
Prepare the Cider Onion Jam Mayo

Mix the Mayo and Jam
In a small bowl, combine the cider onion jam and mayonnaise. Stir until well mixed.
Make the Crispy Potato Nest

Prepare the Potatoes
Peel and julienne the russet potatoes into thin strips. Soak them in cold water for 30 minutes to remove excess starch.

Fry the Potatoes
Drain and pat dry the potato strips. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels. Season with salt.

Form the Nest
Shape the fried potatoes into a nest-like form and set aside.
Assemble the Burger

Build the Burger
Spread the cider onion jam mayo on the bottom half of the toasted brioche bun. Layer with mixed greens, followed by the burger patty with melted cheese, crispy bacon, and a slice of beefsteak tomato.

Place the crispy potato nest on top of the burger and finish with the top half of the brioche bun.
