Prepare the Chive Mayo

    Make Chive Mayo

    In a small bowl, combine the mayonnaise and chopped chives. Mix well and set aside.

Cook the Patties

    Form the Patties

    Divide the brisket blend ground beef into two equal portions (about 4 oz each) and gently form them into balls. Do not overwork the meat.

    Season the Patties

    Sprinkle the formed patties evenly with salt and black pepper on both sides.

    Cook the Patties

    Heat a skillet or griddle over medium-high heat. Once hot, place the patties in the skillet. Using a spatula, smash each patty down to about 1/2 inch thick and let them cook for 3-4 minutes until a crust forms.

    Add Cheese

    Flip the patties and immediately place a slice of American cheese on each patty. Cook for an additional 2-3 minutes until the cheese is melted and the patties are cooked to your desired doneness.

Prepare the Onions

    Caramelize the Onions

    In a separate pan, add a little oil over medium heat. Slice the sweet onion and cook until soft and caramelized, about 8-10 minutes, stirring occasionally.

Assemble the Burgers

    Toast the Buns

    Toast the brioche buns on the skillet until golden brown.

    Build the Burger

    Spread the chive mayo on the bottom half of each toasted bun. Add a layer of arugula, followed by the smashed beef patty with melted cheese, a few slices of tomato, and a generous amount of the caramelized sweet onion. Top with the other half of the bun.
