Grits Preparation

Cook the Grits
In a medium saucepan, bring 4 cups of chicken broth to a boil. Gradually whisk in 1 cup of grits. Reduce the heat to low and cook, stirring occasionally, until thickened (about 20-25 minutes).

Shrimp and Sausage Preparation

Prepare the Sausage and Vegetables
Slice 8 ounces of andouille sausage, 1 medium red bell pepper, and 1 medium yellow onion into small pieces.

Sauté the Ingredients
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sausage and cook until browned (about 5 minutes). Then, add the sliced bell pepper and onion. Sauté until the vegetables are tender (about 5-7 minutes).

Cook the Shrimp
Add 1 pound of shrimp to the skillet. Cook until the shrimp turn pink and opaque (about 3-4 minutes). Season with salt and pepper to taste.
Sweet Heat Pickle Remoulade Preparation

Mix the Remoulade
In a small bowl, combine 1 cup of mayonnaise, 1 tablespoon of sweet pickle relish, 1 teaspoon of hot sauce, 1 teaspoon of Dijon mustard, and 1 tablespoon of lemon juice. Mix well and adjust seasoning if necessary.

Serve a generous scoop of the creamy smoked gouda grits on a plate, topped with the shrimp and sausage mixture. Drizzle the sweet heat pickle remoulade over the top and enjoy!
