Method

Salad Preparation

  1. 1

    Prepare the Salmon

Preheat your grill to medium-high heat. Lightly oil the grill grates. Season the salmon fillets with salt and black pepper. Place the salmon on the grill and cook for about 4-6 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from grill and let cool slightly before flaking into bite-sized pieces.

  2. 2

    Prepare the Vegetables

Thinly slice the watermelon radish and red onion. Halve the sangria cherry tomatoes. Set all of the sliced vegetables aside.

  3. 3

    Assemble the Salad

In a large bowl, combine mixed greens, flaked salmon, sliced watermelon radish, cherry tomatoes, red onion, dried cranberries, and marinated feta cheese. Gently toss to mix all ingredients evenly.

  4. 4

    Add Sunflower Seeds

Sprinkle the sunflower seeds over the top of the salad for added crunch and nutrition.

Rosé Vinaigrette Preparation

  1. 5

    Make the Vinaigrette

In a small bowl or jar, combine rosé wine vinegar, olive oil, honey, Dijon mustard, salt, and black pepper. Whisk or shake well until emulsified.

  2. 6

    Dress the Salad

Drizzle the prepared rosé vinaigrette over the salad and toss gently to coat all ingredients evenly.
