Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Mix well.

  3. 3

    Combine Mixtures

Make a well in the center of the flour mixture and add the frothy yeast mixture and olive oil. Stir until a dough starts to form.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    Let the Dough Rise

Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Assembly and Baking

  1. 6

    Preheat the Oven

Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat up.

  2. 7

    Prepare the Flatbread

Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface into a rectangle or oval shape, about 1/4 inch thick.

  3. 8

    Add Toppings

Transfer the rolled-out dough to a piece of parchment paper. Top with shredded mozzarella cheese, halved cherry tomatoes, and fresh basil leaves. Drizzle with olive oil, and season with salt and pepper to taste.

  4. 9

    Bake the Flatbread

Carefully slide the flatbread (with parchment) onto the preheated baking stone/sheet. Bake for 10-12 minutes or until the edges are golden and the cheese is bubbly.

  5. 10

    Finishing Touches

Remove from the oven and drizzle with balsamic glaze. Let cool for a few minutes before slicing and serving.
