Form the Patty
In a bowl, combine the Angus beef with salt and black pepper. Mix gently and form into a patty that is approximately 8 ounces (0.5 lbs) in weight, making sure it is slightly larger than the bun as it will shrink while cooking.

Cook the Patty
Preheat a grill or skillet over medium-high heat. Once hot, place the patty on the grill or skillet and cook for about 4-5 minutes on one side until a nice crust forms. Flip the patty and cook for an additional 4-5 minutes for medium doneness, or until it reaches your desired level of doneness.

Assemble the Burger
Once the patty is cooked to your liking and the bun is toasted, place the patty on the bottom half of the brioche bun. Top it with the other half of the bun. Serve immediately.
