    Prepare the Vegetables

    Wash and slice the zucchini into thin rounds. Chop the spring onions, separating the white parts from the green tops. Clean and slice the mushrooms. Halve the cherry tomatoes.

    Grill the Vegetables

    In a grill pan, heat 1 tablespoon of olive oil over medium heat. Add the zucchini and mushrooms, season with salt and pepper, and grill for about 4-5 minutes until tender and slightly charred. Add the cherry tomatoes and grill for an additional 2-3 minutes until blistered. Remove from heat and set aside.

Assembling the Sandwich

    Spread the Cheese

    On one side of each slice of Texas toast, spread a generous layer of pimento cheese. On the unspread side of two slices, layer the grilled zucchini, mushrooms, and blistered tomatoes. Add a sprinkle of chopped spring onion greens on top.

    Add Mozzarella

    Sprinkle mozzarella cheese over the layer of vegetables. Top with the remaining slices of Texas toast, cheese side down.

Grilling the Sandwich

    Cook the Sandwich

    In the same grill pan, add the remaining tablespoon of olive oil and heat over medium-low. Carefully place the assembled sandwiches in the pan. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese has melted.

    Once grilled, remove from the pan, slice in half, and serve hot. Enjoy your delicious pimento grilled cheese!
