Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

  2. 2

    Make Dough

In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

  1. 5

    Prepare Spinach

In a pan, sauté minced garlic in a little olive oil until fragrant. Add fresh spinach and cook until wilted. Remove from heat.

  2. 6

    Mix Filling

In a mixing bowl, combine the sautéed spinach, ricotta cheese, feta cheese, black pepper, and nutmeg. Mix until well combined.

Assemble and Bake

  1. 7

    Shape Dough

Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a flat circle.

  2. 8

    Add Filling

Place a generous spoonful of the filling in the center of each dough circle, fold over, and pinch the edges to seal.

  3. 9

    Prepare for Baking

Place the filled dough on a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with sesame seeds.

  4. 10

    Bake

Preheat the oven to 375°F (190°C). Bake the filled dough for 20-25 minutes or until golden brown.
